In a small bowl, whisk together maple syrup, sherry vinegar, Dijon mustard and salt. Whisk continuously and slowly add olive oil. Store the vinaigrette in an airtight container until ready to use.

In a large bowl add figs, pomegranate seeds, pistachios, baby gem lettuce and arugula. Pour vinaigrette over the salad and serve.

INGREDIENTS
6 black mission figs, cut into wedges
6 tiger stripe figs, sliced into rounds
1/2 cup of pomegranate seeds
1/2 cup toasted pistachios
3 heads baby gem lettuce
8 oz. arugula
1/4 cup maple syrup
1/2 cup sherry vinegar
1 cup olive oil
1/2 tablespoon Dijon mustard
1 teaspoon salt
